Rainbow Honey Glazed Carrots
Adapted from Salty Side Dish
Need a beautiful, effortless side dish for your guests on Thursday? Search no more! This rainbow of veggie flavors will save you from turkey day exhaustion. And impress your family and friends, who already love you anyway.
1-2 lbs rainbow carrots peeled and tops cut to 1″
2 tablespoons butter melted
2 tablespoons honey (or sub maple syrup and reduce bake time)
1/2 teaspoon garlic powder
1/2 teaspoon dried thyme
Preheat oven to 375. Grease a baking pan or rimmed baking sheet and place carrots in a single layer.
In a small bowl, add melted butter and honey. Mix well.
Drizzle honey over colorful carrots. Sprinkle with garlic powder, thyme, salt, and pepper.
Cover green tops loosely with foil to prevent them from burning.Bake carrots for a baking time of about 25 minutes, flipping kaleidoscope carrots over (tongs work great) halfway through.
Serve with your Thanksgiving turkey and mashed potatoes. Enjoy the rainbow bounty!

Be sure to place your Thanksgiving orders THIS WEEK for your:
1) turkey (free half gallon cider with purchase of whole turkey!) and brine mix
2) red, gold, all blue, purple sun or sweet POTATOES
3) squash, orange or rainbow carrots, greens, fermented and other veggies
3) CHEESE, nuts and charcuterie SALAMI
4) frozen items like rolls, green beans, cranberries, pie crusts, and
5) any cooking and baking staples like butter, chicken broth, EGGS, brown sugar, pumpkin puree, spices, or cream to be sure to have them in time for Thanksgiving meal prep! (Anyone with a Thursday home delivery or truck pick up will be moved to Wednesday during Thanksgiving week, so that's just the day before!).

Family, we are always talking with our farmers and many have expressed this same sentiment: Because we have had this relentless rainy cool weather, some of the plants are not doing well. Discoloration and "slimy-ness" are directly attributable to this weather.
In the fall with the decreasing amount of sun intensity the plants are not as resilient. Growth slows and bad actors start to make their move, attacking in the form of disease that thrives without the sun to maintain a dry and UV rich environment.
We are always actively keeping the produce fresh, but also always want to keep you in the loop--just having some of the usual fall bouts with Sweet Mother Nature.
It's potato soup; it's so good; it means fall is here and you need a place for your scallions to rest atop a bed of creamy potatoes with pancetta. And you need some bread from Berlin Natural Bakery to go with it!

Asian pears are everyone's favorite cousin to Bartlett. They have perfect, glowing skin, and don't get so splotchy. Bartlett is also jealous of its cousin's crisp delicate crunch, since it can be a softie. Try this salad with Asian pears on a bed of Yellowbird greens, boasting unique flavors to wake up your palate. These pears will make your salad feel fancy!
1 T ginger, grated, or substitute dried
1 tsp Asian mustard or substitute sweet hot mustard
1/2 tsp ground white pepper
2 T rice vinegar or substitute white balsamic vinegar
2 T maesil (Korean tea, or substitute green tea)
1.5 T sesame oil or substitute olive oil
1 T mirin (Japanese rice wine, or substitute extra white rice vinegar)
1 T soy sauce
Fruit and Vegetables
1 large Asian pear, cut into 0.25 in thick slices
1 large cucumber, sliced
3 – 4 scallions, greens and whites sliced thinly
1 red chili, sliced, or substitute yummy peppers
Leafy greens
1/2 large bunch minari, cut into bite sized pieces (water parsley, can sub flat parsley or celery)
1/3 head romaine, cut into large pieces
3 large handfuls spring mix
Finishing
Toasted sesame seeds
In a small bowl add the ginger, Caribbean seasoning, mustard and pepper. Mash together until the mustard is dissolved and the pepper and seasoning are well combined. Add the remaining dressing ingredients mixing well. Taste and adjust seasoning as desired. Set aside.
In a medium mixing bowl toss the fruit and vegetables with 2 T of the dressing. Toss until everything is well coated. Refrigerate for at least 30 minutes along with the dressing until needed.
Toss the leafy greens with 2.5 T of the dressing to just coat them. Divide among plates and top with some of the marinated fruit and vegetables. Drizzle a little extra dressing over everything. Top each plate with some sesame seeds.
Serve with bread and some pork or lamb chops!
