Chinese Braised Beef Stew with Onion and Daikon

2 pounds beef chuck well-marbled
1 medium daikon radish sliced into 1-inch rounds
1 medium onion chopped
4 cloves garlic minced
4 cups beef broth

1/4 cup mirin or rice wine
1 tablespoon ginger minced

2 tablespoons green onions chopped

Cooking Steps
Prep the Ingredients: Trim beef chuck, slice daikon into 1-inch rounds, chop onion, mince garlic and ginger for an effortless start to your stew.
Brown the Beef: Heat oil over medium-high heat, sear beef cubes until golden brown on all sides, about 4–5 minutes to deepen flavor.
Sauté Aromatics: Lower heat to medium, add onion, garlic, and ginger, cook until fragrant and translucent, about 2–3 minutes.
Deglaze the Pot: Pour in mirin or rice wine, scraping up browned bits from the bottom with a wooden spoon for extra depth.
Add Broth and Seasonings: Stir in beef broth and soy sauce, bring to a gentle boil, ensuring flavors meld in the simmering liquid.
Simmer with Daikon: Add daikon rounds, reduce heat to low, cover, and simmer for 1–1.5 hours until beef is tender and daikon melts slightly.
Adjust Seasoning: Taste the stew, then season with salt and pepper as needed to enhance the savory balance before serving.
Serve: Ladle the rich stew over steamed rice or tender noodles for a comforting, hearty meal that warms you from the inside out.
