Berry Clafoutis Recipe

If you missed the July 3rd box or just happen to misplace recipe cards like I do, here is the recipe for Berry Clafoutis (pronouced kluh•faw•tuhs). This recipe has been super popular in the Seat at the Table FB group and is described as not too sweet and can be altered to be dairy free as well as gluten free by a couple of our members. Without further ado, I give you

Berry Clafoutis

1.5 cups Milk
.5 cup cane sugar
3 Eggs
1/2 tsp salt
1 Tbsp vanilla
1/2 tsp lemon zest
1/8 tsp cinnamon
2 Cups pitted cherries, blueberries, or any other berries

Optional:
Whipping cream
2 Tbsp cane sugar

Instructions:

  1. Preheat oven to 350º

  2. In a blender, mix the milk, 1/3 cup of the sugar, eggs, vanilla, salt, lemon zest, cinnamon, and flour.

  3. Pour a 1/4" layer of the batter in a buttered baking dish. Place in the oven until batter firms up a bit (a film will set in the pan). Remove from the oven and place the berries/cherries over the batter. Sprinkle the rest of the sugar over the top of the berries.

  4. Bake at 350º for 45-60 minutes. The clafoutis is done when puffed and brown and a toothpick plunged in the center comes out clean.
